    Grilled Stuffed Bell Peppers

    • 6 large red bell peppers
    • 1 cup prepared couscous
    • 1/4 cup fresh basil
    • 1/2 medium yellow onion
    • 1 cup diced eggplant
    • 1 1/2 sugarplum tomatoes
    • 4 oz mozzarella
    • 1/2 cup bread crumbs or croutons
    • Salt and pepper to taste
    1. Halve the bell peppers, removing seeds and ribs.
    2. Dice the onion, eggplant and tomatoes. Roughly chop the basil, and cut the mozzarella into big-ish chunks.
    3. Saute the onion and eggplant over medium heat until soft. Toss in the chopped basil and tomatoes. Saute for 1 minute longer. Season with salt and pepper. Mix in the chunks of mozzarella.
    4. Stuff the peppers with mixture, add a garnish of croutons or bread crumbs and add more cheese if desired.
    5. Once stuffed, grill the peppers (or can be baked in the oven) - they will be done when the cheese is bubbly and brown.
