    Ingredients
    • 1 pound fresh green beans, washed and trimmed
    • 1 cup cherry tomatoes, washed and halved
    • 1/2 cup pitted kalamata olives, halved
    • 1 medium red onion, sliced thinly into 1” slices
    • 1/4 cup feta cheese, crumbled
    • 1/8 cup red wine vinegar
    • 1 Tbsp minced garlic
    • 1 tsp dried oregano
    • Dash of lemon juice
    • 1/2 cup extra virgin olive oil
    • Salt and pepper, to taste
    Instructions
    1. Prepare a steamer pot for the beans. Once the water is boiling, steam the green beans until just al dente, about 4 minutes. Transfer green beans to a large ice bath. Once chilled, drain and cut beans into 2" pieces.
    2. Add tomatoes, olives, red onions and feta to green beans and toss together. Chill until ready to serve.
    3. In a separate, small bowl, blend red wine vinegar, garlic, oregano and lemon juice. While whisking, slowly add olive oil in a constant stream. Season with salt and pepper to taste.
    4. When ready to serve the salad, remove from fridge. Pour dressing over the salad, tossing until evenly coated. Enjoy!
