    • 1/2 cup rice vinegar
    • 2 Tbsp sugar
    • 2 Tbsp fresh lime juice
    • 2 Tbsp fresh ginger, minced
    • 1 red chili pepper, minced (1 1/2 Tbsp)
    • 1 Tbsp toasted sesame oil
    • 3 cucumbers, cut into 1/4-inch slices (thin wedges)
    • 4 scallions, white and light green parts, sliced thin
    • 1/4 cup packed fresh basil leaf, chopped
    • Sea salt & fresh ground pepper
    1. Bring vinegar and sugar to boil in saucepan over medium-high heat. Reduce heat to medium-low and simmer until mixture reduces by half, 5 to 6 minutes. Transfer to medium bowl and cool to room temperature.
    2. Whisk in lime juice, ginger, chile and sesame oil. Toss in cucumbers, scallions and basil; season with salt and pepper, and let sit for 10 minutes or up to 1 hour. Serve cold.
