    Citrus Marinated Fire-Grilled Chicken

    • 2 Tbsp extra virgin olive oil
    • Juice of 2 medium limes (about 1/4 cup)
    • Zest of 1 medium lime
    • 4-5 cloves garlic, minced
    • 2 Tbsp chopped fresh cilantro
    • Salt and pepper
    • 1 pound boneless, skinless chicken breasts
    1. Mix together the olive oil, lime juice, zest, garlic, cilantro, salt and pepper in a large bowl. Add chicken and cover tightly with plastic wrap. Put in the fridge and allow to marinate 1-2 hours. (Or, for a great freezer meal, put the marinade and chicken in a freezer bag and put in the freezer until ready to use - thaw and cook as normal.)
    2. Heat grill or grill pan over medium-high heat. Remove chicken from the marinade, discarding the remaining marinade. Place the chicken on the hot grill or pan, working in batches if necessary (don’t crowd the pan). Cook for about 6 minutes on each side depending on thickness, or until done.
