    • 1 can solid white albacore tuna fish
    • 1 tsp olive oil
    • Juice from 1 large lemon
    • 4 fresh basil leaves, chopped
    • 2 Tbsp of grated parmesan cheese
    1. Mix all ingredients in bowl.
    2. Place a spoonful of mixed tuna onto a stone ground wheat cracker.
    3. Try topping with a wedge of tomato, grated parmesan cheese, fresh chopped basil and salt & pepper, to taste.
