    Ingredients
    • 2 Tbsp minced yellow onion
    • 1 garlic clove, minced
    • 5 ounces lean ground turkey
    • 2 tsp skim milk
    • 1 egg white
    • 3 Tbsp whole wheat bread crumbs
    • 1 tsp mustard
    • 1 tsp Worcestershire sauce
    • 1 tsp capers, chopped
    • 2 Tbsp of ketchup
    • 1 1/2 cups steamed green beans
    • 1 Tbsp lemon juice
    • Drizzle of olive oil
    Instructions
    1. Preheat the oven to 400ºF (205ºC).
    2. Saute 2 Tbsp minced yellow onion and 1 garlic clove, minced, in a small skillet coated with nonstick cooking spray for 2 minutes; remove from heat and place in a mixing bowl. Allow to cool for a couple minutes.
    3. Add 5 ounces lean ground turkey, 2 tsp skim milk, 1 beaten egg white, 3 Tbsp whole wheat bread crumbs, 1 tsp mustard, 1 tsp Worcestershire sauce, and 1 tsp chopped capers; mix to combine.
    4. Place turkey mixture in a small muffin tin coated with nonstick cooking spray (top with a glaze of ketchup); bake 15 minutes.
    5. Serve with 1 1/2 cups steamed green beans tossed with 1 tablespoon lemon juice and a drizzle of olive oil.
