    Ingredients
    • 6 corn tortillas
    • About 7 ounces of steak (I had a 20 ounce flank steak, so use whatever you have!)
    • 3/4 cup pomegranate seeds
    • 1/2 cup diced mango (mango is seasonal-fine if frozen)
    • 1/2 jalapeno pepper, seeds and veins removed
    • 1/2 red onion
    • 2 Tbsp fresh cilantro
    • 2 cloves fresh garlic
    • 2 Tbsp lemon or lime juice
    • 1/2 tsp salt
    • 1 tsp pepper
    • 4-6 Tbsp cheese
    • 2 cups arugula
    Instructions
    1. Preheat oven to 350ºF (175ºC).
    2. Place steak into a skillet and cook for about 35 minutes, turning twice.
    3. Dice the jalepeno pepper and red onion. Combine with pomegranate seeds, minced garlic, cilantro, diced mango, salt, pepper and a squeeze of lemon juice. Toss to combine.
    4. Warm the tortillas, shred the cheese. Put the tacos together and top with cheese, salsa and arugula.
    5. Optional: You can make a “braising sauce” of vegetable stock, balsamic vinegar, Worcestershire sauce, salt, pepper, cumin and chili powder to taste. Spoon this sauce over the top when you turn it twice.
